    When Bihar is immersed in an intense devotion  

    The first day marks the onset of this four-day festival by performing the rituals for ‘Nahan Khan’, which means to bathe and eat. On this day, the worshippers gather on the banks of river Ganga for a dip before the sunrise and prepare food with the water of the river for the sun god.     This scrumptious dessert is a traditional savoury of Nagpur. Its subtle flavour of orange and cardamoms gives it a distinct taste.

    •         Refined flour – 1 Cup
    •         Ghee – 2 Tbsp
    •         Orange juice - 1 Cup
    •         Powdered Sugar - 1/2 cup

    •         Dry fruits: Almonds & Cashews



    •         Slice the almonds and cashews into thin bits and keep it aside.
    •         Extract the orange juice without any pulp in it and grate the orange peel. Keep it aside.
    •         Take a heavy-bottom pan and heat the ghee in it. Later, add the refined flour little by little, while continuously stirring it.
    •         Roast the flour for about 15 mins until it turns aromatic and golden in colour.
    •         Pour in the 1/4 cup of orange juice and stir continuously. Reserve the remaining liquid for further use.
    •         Add the dry fruits, orange zest, powdered sugar and the cardamom powder. Stir well and later, add the remaining ¾ cup of orange juice. Stir continuously till the batter forms a lump.
    •         Once the mixture turns into a dough, turn off the heat and keep the pan aside. Get a plate greased with ghee and transfer the dough to it.
    •         Spread it evenly on the plate and flatten the surface. Use a cutting knife to slice it into squares when it is warm. Keep it aside for 2 - 3 hours, and it is ready to serve.

    •         Milk: 2 litres
    •         Sugar: 1 teacup
    •         Crushed Vermicelli: 3/4th teacup
    •         Ghee: 3 ½ tablespoons
    •         Cashews: 20 grams
    •         Almonds: 20 grams
    •         Pistachios: 15 grams
    •         Dry dates: 5 whole
    •         Charoli/chiraunji: 15 grams


    •         Soak all the dry fruits overnight. Next morning, slice the cashews and the dates. Also, slice the almonds, Charoli, and pistachios after peeling them. Drain the water and put them aside.
    •         Boil the milk while continuously stirring it on medium flame. Wait until it reduces to 3/4th of its volume and keep it aside.
    •         Take a pan to heat the 3 Tbsp of ghee. Add all the sliced dry fruits, and semi fry them until they turn brown. Keep it aside.
    •         In the same wok, add the remaining ½ Tbsp of ghee along with the crushed vermicelli. Stir till they turn light brown.
    •         Next, immediately pour the boiled milk that we had kept aside.
    •         Continue stirring for about five mins until the vermicelli gets tender.
    •         Next, add the sugar to it and stir until it is completely dissolved.
    •         Garnish with the fried dry fruits along with few strands of saffron and it is ready to be served.

    1.    Gujiya

    This crescent-shaped sweet is the favourite of every “Amdavadi.” It is prepared mostly during festivals and special occasions like Diwali.


    For the love of Gujiyas



    • For the shell:
    • All-purpose flour - 1 ½ cups
    • Ghee – 5 Tsp
    • Baking powder – A pinch


    For the Filling:

    • Khoya - 1 cup
    • Green Cardamom Powder - 1/2 tsp
    • Finely chopped Almonds - 25 gms
    • Raisins – 25 gms
    • Dried Coconut (grated) - 25 gms
    • Powdered Sugar – 250 gms



    • How to make the dough:
    • Mix 5tsp of ghee with the all-purpose flour and knead it into a soft dough using water.
    • Set aside and cover it with a moist cloth for 20 mins.


    Making the filling:

    • Take a pan and heat the khoya in it. Stir constantly to avoid burning.
    • Add the dry fruits, sugar and cardamom powder and continue stirring.
    • Remove from the heat after it turns brown, allow it to cool.
    • Take the dough and split it into small balls. Roll each ball into a small round of about 4-inch diameter.

    Final Process:

    • Fill it half with the khoya mixture, fold it and seal it by twisting the edges inwards. Ensure that the filling doesn't ooze out.
    • Prepare all the gujiyas and lay them on a cloth. Heat ghee in a Wok and deep fry the gujiyas in batches on a medium flame.
    • As soon as the gujiyas turn golden brown in color, drain and remove it from the wok.
    • Instead of deep frying, it can be baked too, especially for the health-Conscious people.

    1.    Chana Jalebi

    The paneer jalebi often known as the “Chana Jalebi” in Bengal and Orissa, is made with pure fresh Chana or cheese. This dessert is very much indigenous to the Bengali cuisine and is something that is not found in other cities.

    • Paneer: 150 gm
    • Milk: 2 Tsp
    • Saffron: few strands
    • Flour: 1 Tsp
    • Baking powder: a pinch
    • Sugar: 1 cup
    • Water: 1/2 cup
    • Cardamom powder: 1/4 tsp
    • Green cardamom: 3-4
    • Oil for deep frying



    • Take a pan, fill it with a ½ cup water and bring it to boil. Add the sugar and wait until it completely dissolves.
    • Add powdered cardamom and continue boiling on medium heat.
    • Knead the freshly prepared Chana/Cheese with milk, cardamom powder, baking powder and knead to make it a moist dough.
    • Roll the dough into a medium thick rope of around 13-14 cm.
    • Slowly coil the rope, make two and a half turn leaving small space between the turns.
    • In a pan heat the oil on medium flame.
    • Slowly put the rolled coils in the oil and fry till golden brown.
    • Transfer the paneer jalebis immediately in the warm syrup that was freshly prepared.
    • Cover and let it stand for few hours. Later, heat the syrup with the paneer jalebis until it boils.
    • Let it cool for few hours. You will observe that the Paneer jalebis are absorbing the syrup.
    • Serve the paneer jalebis warm or cold as per your preference.
